Chocolate Strawberry Tart #SundaySupper #FLStrawberry
Do you get hit with the January doldrums? I must admit that as our weather gets chilly (50-60 degrees), I yearn for something bright and cheery on my table. I know I am fortunate to live in Florida where I can easily grab a quart or two of Fresh from Florida Strawberries from December through April. I used them recently in Strawberry Bread, Mom’s Strawberry Pie, Strawberry Cobbler Bars and Heavenly Cassata. Today, my Sunday Supper family is bringing you the recipes that will afford you the taste of Fresh from Florida Strawberries all winter long. I can’t think of a more refreshing way to indulge than with a Chocolate Strawberry Tart.
This is not an ordinary post, however. Today, I am blogging from Tampa with members of my Sunday Supper family as part of a very special weekend. We are staying at the beautiful Epicurean Hotel and will be tweeting live tonight from our #SundaySupper Live Twitter Party dinner at Elevage. Additionally, we will be enjoying tastes from Cask Social Kitchen, Ava, Edge Rooftop Bar at Epicurean and Bern’s Harry Waugh Dessert Room and I can’t wait to learn firsthand about Florida Strawberry Growers and the Florida Strawberry Industry.
We will be packing a lot into this weekend just as I have packed a ton of strawberries into today’s Chocolate Strawberry Tart. The chocolate wafer crust is topped with chocolate ganache into which sliced Florida strawberries are pressed. Chopped Florida strawberries are blended into the whipped cream/mascarpone topping and whole Florida strawberries adorn the top. To take this tart over the top chocolate ganache is drizzled over the berries.

- Chocolate crust:
- 9 ounces chocolate cookies, I use Nabisco chocolate wafers
- 2 tablespoons (.95 ounces) sugar
- 6 tablespoons unsalted butter, melted
- Chocolate ganache layer:
- 8 ounces chocolate chips
- ½ cup (3.70 ounces) heavy whipping cream
- ¾ cup (4 ounces) sliced Florida strawberries, thoroughly dried
- Strawberry cream topping:
- 4 ounces mascarpone cheese
- 1 cup (8.35 ounces) heavy whipping cream
- ½ cup (4.30 ounces) milk
- ½ cup (3.75 ounces) sugar
- ⅔ cup (3.55 ounces) chopped Florida strawberries, thoroughly dried
- 7 whole Florida strawberries, stems removed
- For the chocolate crust:
- Preheat the oven to 350º. Spray a 9" tart pan with nonstick cooking spray. Line the bottom fo the pan with parchment paper and set aside.
- Place the cookies into a food processor along with the sugar. Process until they are completely broken up. Add the butter and pulse on/off until well blended.
- Transfer the crust to the prepared pan. Use your fingers and palm of your hand to evenly distribute the crust up the sides of the pan and on the bottom.
- Place the pan on a piece of aluminum foil Bake at 350º for 10 minutes. Remove from the oven and cool completely before adding the ganache.
- For the chocolate ganache layer:
- Place the chocolate and cream in a microwave safe bowl. Microwave just until the chocolate melts. Stir until completely blended.
- Reserve ⅓ cup (3.90 ounces) ganache for the top of the tart.
- Transfer the remaining ganache to the cooled tart and gently spread evenly over the bottom of the crust.
- Place the strawberries over the ganache, in an even layer.
- Refrigerate until set, 30 minutes.
- For the strawberry cream topping:
- Place the mascarpone, cream, milk and sugar into a large mixing bowl fitted with a wire whisk. Beat of low speed until the mixture starts to hold together. Increase the speed to medium high. Once soft peaks form, add the chopped strawberries. Continue to beat on medium high speed until stiff peaks form.
- Transfer the topping to the crust. Spread evenly with a spatula.
- Refrigerate until set, 1 - 2 hours.
- Lift the bottom of the pan out of the tart pan. Using a large metal spatula, transfer the tart off of the pan. The parchment paper will stick to the bottom of the pan. If preferred, the tart may be served directly from the pan in which case, do not line the pan with parchment paper.
- Place whole strawberries on top of the strawberry cream. Place the remaining ganache into a small plastic freezer bag. Cut an opening from one of the bottom corners. Drizzle the ganache over the top of the tart.
- Serve immediately or within 4 hours.
