Blueberry Fruit Salad with Blueberry Dressing
I couldn’t wait to get in the kitchen and get busy when I heard that Wish Farms was sponsoring a #BlueberryToss contest for attendees of Food Wine Conference. The only problem was that I was so focused on what I was doing that I missed the line that stated the dish had to be a salad. Not a huge problem since I was able to submit Blueberry Cream for the #MakeItWithMilk contest.
It did mean that I had to get back to work to come up with a recipe that would include at least one serving size of blueberries and fit under the description of ‘salad’.
It didn’t take me long to realize that what I really wanted to make was a blueberry fruit salad and top it with a blueberry dressing. The question was which fruits did I want to include and how did I want to make the dressing.
Blueberries taste great with raspberries and mangoes and since I was making the blueberry fruit salad in glass containers, it was important that the fruits selected offered a bright pop of color. I showcased the blueberrries on the bottom and top with a layer of raspberries and a layer of cut mangoes in between.
This is Desserts Required so it made sense to have a blueberry dressing that is fit for dessert. I processed blueberries, mascarpone cheese, maple syrup, sugar, lemon zest, lemon juice and a pinch of salt in my mini food prep. A friend of mine who is a superb cook and baker was over while I added a little more of this and a little more of that. After a dozen tasting spoons we knew that I had an incredible dressing. Blueberry Fruit Salad with Blueberry Dressing | Print |
- For the blueberry dressing:
- 1 - 6 ounce package blueberries
- 2 ounces mascarpone cheese
- 3 tablespoons maple syrup
- 4 tablespoons sugar
- ½ teaspoon lemon zest
- 2 teaspoons lemon juice
- pinch of sea salt
- For the blueberry fruit salad:
- 2 - 6 ounce packages blueberries
- 1 to 2 - 6 ounce packages raspberries
- 1 to 2 mangoes, cut into pieces without the skin
- For the blueberry dressing:
- Place all of the dressing ingredients into a mini food prep or blender. Process until completely blended together. Set aside while preparing the blueberry fruit salad. The dressing may be made earlier in the day. Stir well before serving.
- For the fruit salad:
- Layer individual glass bowls or containers with the fruit. Place the blueberries at the bottom, top them with raspberries, then mango pieces. Top with blueberries. Stir the blueberry dressing and spoon it over the fruit salad.
