Bacon Chocolate Chip Cookies

  • 2¼ cups (309 grams) all purpose flour
  • 1 teaspoon (5 grams) baking soda
  • ¼ teaspoon (2 grams) salt
  • 16 tablespoons (2 sticks) unsalted butter, softened
  • 1 cup (215 grams) sugar
  • ½ cup (131 grams) light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup (180 grams) semisweet or bittersweet chocolate chips
  • 12 ounces bacon, cooked, drained and broken into pieces
  1. Preheat oven to 350°. Line three baking sheets with parchment paper and set aside.
  2. Whisk the flour, baking soda and salt together and set aside.
  3. Place the butter, sugar and brown sugar in a large mixing bowl. Beat for 3 minutes, scraping the bowl down as needed. Add the egg and vanilla.
  4. Blend in the dry ingredients. Lastly, add the chocolate chips and bacon pieces.
  5. Use a ½ tablespoon cookie dough scoop to scoop dough onto the prepared baking sheets.
  6. Bake in 350° oven for 12-14 minutes, rotating the baking sheets top to bottom and front to back halfway through. Remove from the oven and cool on the pans.
Additional time is needed to cook the bacon. I bake mine at 375° for 30-40 minutes, checking often at the end.
