S’more Poutine

  • 2 russet Idaho® potatoes, 2 pounds total
  • 6½ tablespoons unsalted butter, divided
  • 2 teaspoons light brown sugar
  • ¼ teaspoon ground cinnamon
  • 1 cup plus 2 tablespoons (9.00 ounces) heavy whipping cream, divided
  • 8 ounces semisweet chocolate chips
  • 1 cup (8.00 ounces) mascarpone cheese
  • 1½ cups (2.50 ounces) marshmallows
  • 3 tablespoons confectioners sugar
  • Mini marshmallows for topping, optional
  1. For the potatoes:
  2. Preheat the oven to 400º.
  3. Peel the potatoes and slice them ⅜" thick using either a mandoline or a knife. Transfer the potatoes to a large bowl.
  4. Melt 4 tablespoons butter. Stir the brown sugar and cinnamon into it. Toss the potatoes with the butter.
  5. Place the potatoe slices on a baking sheet. Do not overlap the slices.
  6. Bake at 400º until the potatoes are cooked through and beginning to brown, about 15 minutes. Cool completely.
  7. For the chocolate ganache:
  8. Place 1 cup of whipping cream and 2½ tablespoons butter into a small saucepan. Bring to a simmer. Remove from the heat and add the chocolate chips. Allow them to sit for a few minutes. Stir until smooth.
  9. For the cheese topping:
  10. Place the mascarpone, marshmallows and 2 tablespoons cream into a medium size saucepan. Cook over medium heat until the mixture is smooth, stirring constantly. Remove from the heat and add in the confectioners sugar.
  11. Place the potatoes on a large plate, overlapping but not stacking them.
  12. Drizzle the chocolate ganache over the potatoes.
  13. Drizzle the cheese topping over the ganache.
  14. Sprinkle mini marshmallows on top and serve.
  15. Alternatively, you may make individual S'more Poutine by layering each potato with a drizzle of chocolate ganache topped with a drizzle of cheese topping and a mini marshmallow.
