Chocolate Eggnog Truffles #SafeNog

  • Eggnog:
  • 1 egg plus 1 egg yolk
  • 3 tablespoons sugar
  • ½ cup milk
  • 1 cup heavy cream
  • ½ teaspoon vanilla extract
  • Chocolate Eggnog Truffles:
  • 1 cup eggnog
  • 1 pound semisweet chocolate
  • 8 dashes ground nutmeg, divided
  • 1 cup confectioners sugar
  1. For the eggnog:
  2. Beat the egg, egg yolk and sugar together until light in color. Add the milk, cream and vanilla.
  3. For the chocolate eggnog truffles:
  4. Heat the eggnog in a small saucepan just until it simmers, stirring constantly. Immediately pour over the chocolate. Gently stir until the chocolate is melted and the mixture is smooth. Stir in 4 dashes of nutmeg.
  5. Line a large baking sheet with parchment paper. Use a small cookie dough scoop to transfer the ganache onto the prepared pan. Refrigerate until set, about 30 minutes.
  6. Line a second baking sheet with parchment paper.
  7. Stir together the confectioners sugar with 4 dashes of nutmeg.
  8. For smooth truffles, roll the balls between the palms of your hands. Roll the truffles in the confectioners sugar mixture and place them on the second baking sheet.
  9. Refrigerate to set.
  10. Store the truffles in the refrigerator but allow them to come up to room temperature before serving, if you can wait that long.
Additional time is needed for the truffles to set.
