Autumn Spice Truffles #SundaySupper

  • 15 ounces sandwich cookies
  • 8 ounces cream cheese, softened
  • heaping ½ teaspoon ground cloves
  • heaping ½ teaspoon ground ginger
  • heaping ½ teaspoon ground cinnamon
  • 2 cups semisweet chocolate chips
  • autumn confectioners sugar (optional) – confectioners sugar mixed with dashes of ground cloves, ground ginger and ground cinnamon.
  1. Place the sandwich cookies, cream cheese, cloves, ginger and cinnamon into a food processor fitted with a metal blade. Process until smooth. Transfer the mixture to a small bowl, cover with plastic wrap and refrigerate for several hours or overnight.
  2. Line a baking sheet with aluminum foil and set aside.
  3. Use a small cookie dough scoop to shape the truffles, placing the scoops onto the foil lined baking sheet. Roll them between the palms of your hands to smooth out and freeze for 30 minutes to harden.
  4. Partially melt chocolate chips and then stir the chocolate until completely smooth. This will help temper the chocolate.
  5. Dip each ball into the melted chocolate using two forks. Transfer the truffles to a second aluminum foil lined baking sheet. Drizzle the remaining melted chocolate over the truffles.
  6. Dust with confectioners sugar, if desired.
Additional time is needed to refrigerate and freeze the truffles.
