Total time: 40 mins
  • White wine peach reduction:
  • 4 peaches, pitted and chopped into large pieces
  • 1½ cups Gallo Family Vineyards Sweet White Wine
  • 3 tablespoons sugar
  • White wine peach mascarpone:
  • 1¼ cups mascarpone cheese
  • ¼ white wine peach reduction
  • 4 peaches, halved and pitted
  1. For the white wine peach reduction
  2. Place the peaches, Gallo Family Vineyards Sweet White Wine and sugar into a medium size saucepan. Cook on medium high until the wine is nearly gone and the mixture separates when you pull a wooden spoon along the bottom of the pan, about 10 - 15 minutes.
  3. Transfer the mixture to a fine mesh strainer and push the juice through the strainer. Spoon out the peaches from the strainer and set aside both the juice and the peaches.
  4. For the white wine peach reduction:
  5. Combine the mascarpone and white wine peach reduction into a bowl. Stir until well blended.
  6. Heat the grill to medium heat - either a gas or charcoal grill. If using a charcoal grill, wait until the briquettes are no longer black and have cooked for a bit. Place the peaches onto the grill and cover.
  7. Cook until the peaches are soft and the grill marks have scored the peaches, about 5-8 minutes.
  8. Remove from the heat. Scoop 1-2 tablespoons of the white wine peach mascarpone into the well of the peach halves. Drizzle some white wine peach reduction over the top and serve.
  9. Betsy's tidbits
  10. The mascarpone melts quickly when scooped onto the peach halves. Serve immediately or else your dessert will look similar to my pictures. Not a bad look but not as 'clean' as when initially prepared.
  11. The peaches that have been removed from the strainer may either be served on top of the finished dish or set them aside to enjoy another time.
