Peanut Butter & Jelly Cobbler

  • 8 tablespoons unsalted butter, softened
  • ½ cup creamy peanut butter
  • ½ cup light brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup strawberry jam
  • 7 ounces strawberries, cut into medium size pieces and dried
  • ½ cup cocktail peanuts
  1. For the peanut butter & jelly cobbler:
  2. Preheat oven to 350°. Spray an 8” x 8” baking pan with non-stick cooking spray. Line the pan with parchment paper and set aside.
  3. Place the butter, peanut butter, light brown sugar and sugar into a large mixing bowl. Beat until creamy, about 3 minutes, scraping the bowl down as needed. Mix in the egg and vanilla. Add the flour, baking powder and salt and blend well.
  4. Press ⅔ of the dough into the prepared pan. Spread the strawberry jam over the dough and then place the cut strawberries over the jam. Crumble the remaining dough over the strawberries. Gently pat down. Sprinkle the peanuts over the top and press them gently into the dough.
  5. Bake at 350° for 40 minutes, rotating the pan front to back halfway through. Remove from the oven and cool slightly before serving.

  7. Peanut Butter & Jelly Cobbler may be served hot, warm, room temperature or cold. Ice cream is delicious over the cobbler when served hot or warm.
