Blueberry 'Waffle' Crisp

  • Blueberry layer:
  • 3 pints blueberries, washed and dried
  • 3 tablespoons all purpose flour
  • 2 tablespoons light brown sugar
  • 1 tablespoon lemon juice
  • Topping:
  • 1½ cups almond flour
  • ½ cup sugar
  • ¼ cup light brown sugar
  • ½ cup almonds, crushed
  • 8 tablespoons (1 stick) unsalted butter, cut into pieces
  1. For the blueberry layer:
  2. Preheat the oven to 350°. Set aside an 8" x 12" baking dish.
  3. In a large bowl, gently stir together the blueberries, all purpose flour, brown sugar and lemon juice. Transfer to the baking dish and set aside.
  4. For the topping:
  5. In a large bowl, stir together the almond flour, sugar, brown sugar and almonds. Use your fingers to blend in the butter, but just until it is incorporated. You want the topping to have clumps.
  6. Cover the blueberries with the topping.
  7. Bake in a 350° oven for 50 minutes, rotating the pan front to back halfway through.
  8. Serve hot, room temperature or cold.
