Chunky Monkey Bars

Ingredients
  • 1¾ cups all purpose flour
  • 1 cup oats
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 4 very ripe bananas
  • 16 tablespoons (2 sticks) unsalted butter, melted
  • 1½ cups sugar
  • 3 eggs
  • 1½ teaspoons vanilla extract
  • 1 cup walnuts, chopped
  • 1-1/3 cups chocolate chips
Instructions
  1. Preheat oven to 350°. Line 9" x 13" glass baking dish with parchment paper and set aside.
  2. Whisk together flour, oats, baking soda, baking powder and salt. Set aside.
  3. Mash bananas in large mixing bowl. Add melted butter and sugar and whisk by hand for 2 minutes. Whisk in eggs. Add dry ingredients and whisk only to combine.
  4. Fold in vanilla followed by walnuts and chocolate chips.
  5. Transfer batter to prepared pan. Bake in 350° oven for 35 minutes, rotating pan front to back halfway through.
  6. Remove from oven. Cool. Lift parchment paper out of pan and place onto cutting board. Cut into bars.
