Chocolate Heart Cakes

  • Cake:
  • ¼ cup unsweetened cocoa powder
  • ¾ cup sour cream
  • ¼ cup vegetable oil
  • ½ cup boiling water
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter, softened
  • 1¾ cups light brown sugar
  • 2 eggs, lightly beaten, room temperature
  • 2 ounces unsweetened chocolate, melted
  • 1 teaspoon vanilla extract
  • Chocolate glaze:
  • 7½ ounces semisweet chocolate
  • 1½ tablespoons unsalted butter
  • ¾ cup heavy whipping cream
  • 1½ teaspoons light corn syrup
  • Finishing touch:
  • 3 ounces white chocolate, melted
  1. For the cake:
  2. Preheat the oven to 350º. Butter a 9” x 13” baking pan and line with parchment paper. Set aside.
  3. In a small bowl whisk boiling water with cocoa, sour cream and vegetable oil. Set aside.
  4. In a separate bowl whisk flour, baking soda and salt together. Set aside.
  5. Beat butter and brown sugar in a mixing bowl on medium high speed for 3 minutes, scraping down as needed. Add eggs. Blend in ½ of dry ingredients, followed by the cocoa mixture. Add remaining dry ingredients. Lastly, add melted unsweetened chocolate and vanilla.
  6. Transfer batter to prepared pan. Bake in 350º oven for 25-30 minutes or until toothpick or cake tester comes out clean. Refrigerate until cold.
  7. Use a small metal spatula to go around edges of pan. Invert cake onto large board and remove parchment paper. Cut edges off cake.
  8. Use a 4½” heart shaped cookie cutter to cut out 6 large heart shaped cakes. Transfer heart cakes to cooling rack. Refrigerate for 30 minutes.
  9. For the chocolate glaze:
  10. Place chocolate chips in medium bowl and set aside. Simmer butter, whipping cream and corn syrup in small saucepan. Pour over chocolate and allow to sit for 5 minutes. Stir until smooth. Set aside to cool for 10 minutes.
  11. Spread a thin layer of the glaze over top and sides of each cake and refrigerate for 20 minutes to set. Melt the white chocolate and transfer it to a small freezer bag. Cut corner off bag and set aside.
  12. Once the chocolate has set, add another thicker layer of the glaze over top and sides of each cake. Pipe three straight lines of white chocolate evenly across the heart. Drag a toothpick through chocolate, starting at the top of the heart and taking it to the bottom. Then reverse the motion to drag the toothpick from the bottom to the top. Continue to do this one or two more times. This will give a herringbone pattern.
  13. Refrigerate to set. Transfer Chocolate Heart Cakes to individual plates or a platter. Serve at room temperature.
