Banana Nutella Cups

  • 8 tablespoons (1 stick) unsalted butter, softened
  • ¾ cup Nutella
  • 1½ cups sugar
  • 3 eggs, room temperature
  • 2¼ cups all purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 3 bananas, mashed
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  1. Preheat oven to 350°. Set aside 2 – 12 cup muffin pans.
  2. Place butter, nutella and sugar in large mixing bowl. Beat until creamy, about 3 minutes, scraping the bowl down as needed. Add eggs, one at a time.
  3. Blend in flour, baking powder and salt. Add bananas, vanilla and chocolate chips and mix on low speed until combined.
  4. Spray the pan with non-stick cooking spray. Use a large cookie dough scoop or a gravy ladle to evenly transfer the batter to the muffin cups.
  5. Bake at 350°, on a rack in the middle of the oven, for 18 minutes.
  6. Remove and cool completely in the pan. Use a small metal spatula to go around the edges of the Banana Nutella Cups.
  7. Remove from the pan and serve.
