Banana Chocolate Brownies

  • 12 tablespoons (1½ sticks) unsalted butter
  • 3 ounces unsweetened chocolate
  • 3 ripe bananas
  • 2 cups all purpose flour
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 eggs
  • ¾ cup sugar
  • ½ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • confectioners sugar for dusting
  1. Preheat oven to 300°. Grease a 9” x 13” pan and set aside.
  2. Melt butter and unsweetened chocolate together, either in the microwave or on the stove. Set aside.
  3. Mash bananas together in a small bowl and set aside.
  4. Whisk flour, baking soda and salt together and set aside.
  5. Place eggs, sugar and brown sugar in a large mixing bowl. Beat for a couple of minutes. Add ½ of the dry ingredients, followed by the butter/chocolate and then the remaining dry ingredients, scraping the bowl down in between additions. The mixture will be fairly thick at this time.
  6. Add bananas and vanilla. Lastly, mix in the chocolate chips.
  7. Transfer the batter to the greased pan. Bake in the middle of a 300° oven for 40 minutes, rotating the pan front to back halfway through.
  8. Cool completely on a cooling rack. Cut into individual brownies and dust with confectioners sugar.
