Coconut Cherry Bars

Ingredients
  • Crust:
  • 8 tablespoons (1 stick) unsalted butter, softened
  • 3 tablespoons sugar
  • 1 cup all purpose flour
  • Topping:
  • ¼ cup all purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 eggs, slightly beaten
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 1-1/3 cups shredded coconut
  • ½ cup dried cherries, chopped
Instructions
  1. For the crust:
  2. Preheat oven to 350°. Butter an 8” x 8” baking pan and set aside.
  3. Blend the butter and sugar together in a mixing bowl. Add flour and blend well. Transfer the crust to the prepared pan and press evenly into the bottom.
  4. Bake at 350° for 25 minutes.
  5. For the topping:
  6. While the crust bakes, whisk together ¼ cup flour, baking powder and salt in a small bowl.
  7. In a separate bowl, gradually add sugar to slightly beaten eggs. Add vanilla followed by flour mixture. Stir in coconut and chopped cherries.
  8. Once the crust comes out of the oven, spread the topping over the crust. Bake at 350° for 35 minutes.
  9. Cut into bars while still warm. Cool completely before removing them from the pan.
