Gluten Free Chocolate Chip Cookies #SundaySupper

  • 16 tablespoons (223 grams) unsalted butter, softened
  • 1¾ cups (370 grams) sugar
  • 2 eggs
  • 1 tablespoon (13 grams) vanilla extract
  • 2½ cups (379 grams) Bob's Red Mill Gluten Free 1 to 1 Baking Flour
  • 1 teaspoon (5 grams) baking soda
  • 1 teaspoon (6 grams) kosher salt
  • 1½ cups (285 grams) dark chocolate chips
  1. Whisk together the flour, baking soda and salt. Set aside.
  2. Cream the butter and sugar until light and fluffy, about three minutes. Add the eggs, one at a time, followed by the vanilla.
  3. Blend in the dry ingredients.
  4. Mix in the chocolate chips.
  5. Transfer to dough to a bowl and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°. Line three baking sheets with parchment paper and set aside.
  7. Use a 2 teaspoon cookie dough scoop to drop the dough onto the prepared pans.
  8. Bake in a 350° oven for 16-18 minutes, rotating the pans top to bottom and front to back halfway through.
  9. Remove from the oven and cool completely.
