Autumn Spice Truffles #SundaySupper
I love this week’s Sunday Supper theme, Budget Friendly Recipes. It makes so much sense with the holiday season just around the corner.
I must admit that Autumn Spice Truffles were not my first option. My original thought was to make something using thick cut oats that I had used in a sandwich last weekend. I decided oats work, beautifully, with dried cherries and chocolate chips and after a short debate with myself I made bars instead of cookies.
The bars were delicious and I was thrilled. Until…I realized that they are soooooo not budget friendly that it was pathetic! They will make it to Desserts Required but not today. So, I went back to the drawing board and what followed was Option 2, Autumn Spice Truffles.
The scent of ginger, cinnamon and cloves reminds me of autumn – even if I’m eating something with these ingredients in the middle of summer. So many of us have them in our cupboard that I decided to use ginger, cinnamon and cloves as the focal point of my more budget friendly recipe.
I had to make one worthy of Desserts Required, which is how Autumn Spice Truffles were created. I could not, possibly, make this easier.
Autumn Spice Truffles incorporate sandwich cookies, cream cheese and those fabulous spices of autumn. Rolled into balls, they are dipped into chocolate. Topping them with a dusting of confectioners sugar that has ginger, cloves and cinnamon mixed in is optional. The topping does add an extra autumn spice kick but the truffles are super delicious either way.
I must to warn you that I had a lot of trouble not eating the entire batch of Autumn Spice Truffles. Thankfully, they are budget friendly so when you give them to friends, you will come out the hero and your jeans will thank you, too.
Autumn Spice Truffles #SundaySupper | Print |
- 15 ounces sandwich cookies
- 8 ounces cream cheese, softened
- heaping ½ teaspoon ground cloves
- heaping ½ teaspoon ground ginger
- heaping ½ teaspoon ground cinnamon
- 2 cups semisweet chocolate chips
- autumn confectioners sugar (optional) – confectioners sugar mixed with dashes of ground cloves, ground ginger and ground cinnamon.
- Place the sandwich cookies, cream cheese, cloves, ginger and cinnamon into a food processor fitted with a metal blade. Process until smooth. Transfer the mixture to a small bowl, cover with plastic wrap and refrigerate for several hours or overnight.
- Line a baking sheet with aluminum foil and set aside.
- Use a small cookie dough scoop to shape the truffles, placing the scoops onto the foil lined baking sheet. Roll them between the palms of your hands to smooth out and freeze for 30 minutes to harden.
- Partially melt chocolate chips and then stir the chocolate until completely smooth. This will help temper the chocolate.
- Dip each ball into the melted chocolate using two forks. Transfer the truffles to a second aluminum foil lined baking sheet. Drizzle the remaining melted chocolate over the truffles.
- Dust with confectioners sugar, if desired.
